I am wondering if I can set within CamBam the travel Z height above the material.

Yes, it is the clearance plane value in each machining operation (MOP)

Also, if you want to default to a particular height you can set that in the styles library in the root style.  Then every operation will use that default height unless you change it or use a non-default style where its different.
